What's for Supper? Meal planning

It has been SO hot in Georgia!  Who wants to cook or grill when it's over 100 degrees?  I admit, not me.
After dark tonight, I put on a mess of garden fresh green beans to cook up for supper tomorrow night.

Didn't make it to the grocery store this weekend.  So I had to rearrange my plan a bit prior to posting it.  I usually purchase groceries once a week on Saturday.  Instead, we've spent most of our weekend at our rental house cleaning, painting and getting it ready to rent.  Thankfully, we worked inside with AC.  The heat has really whipped my rear this weekend and I was just ready to get home and relax a bit.
Here's this week's supper menu:
Monday - Green beans and cornbread
Tuesday - Leftovers with Mac-n-cheese
Wednesday - Hot dogs/burgers on the grill.  Tater salad and baked beans. Plus POOL time!
Thursday - Cream cheese Crock pot Chicken (new recipe) over rice.
Friday - Chicken burritos (using last night's leftovers) with fresh fruit
Saturday - Sandwich 'bar'
And just because it was TOTALLY delicious, here's what I had for lunch today:  Limited edition Pork n Slaw sandwich on a Hawaiian Sweet Roll at Firehouse Subs.

How are you beating the heat with your meal planning?  Any 'cool' meal ideas?

  1. Love the pork and slaw sandwich! That's the kind of b-b-q we are used to coming from Mississippi. Hard to find out here in Houston-they love their brisket. It's ok, but it's not pulled pork! Happy 4th Hugs Carol

  2. Thanks for the menu, enjoy the blogs with menus and recipes, helps many of us plan our weekly meals. Try to stay cool, it is hot in Georgia this year, limits our activities. Hope you and family are enjoying holiday.
