Roast Beef Sliders

Got Beef?
Yeah, I went there.
I love this recipe to use up leftover roast beef.
Here's what you will need ~
  • Small Rolls - I used Walmart Deli brand Potato Rolls this time.  King’s Hawaiian Hawaiian Sweet Rolls work well too.
  • Roast Beef (use leftovers or Deli sliced Roast Beef)
  • Peach Preserves (2/3 cups for entire package of rolls)
  • Mayo and Honey Mustard (1/4 cup of each, if using 12 rolls package)
  • Cheese slices  **Optional
1.Preheat oven to 325F.


2.Remove rolls and cut in half horizontally, creating 1 top and 1 bottom. Spread preserves on bottom side of rolls. Top with cheese slices (if you are using cheese) then roast beef.  If you use Hawaiian Sweet Rolls, you can leave the entire package of rolls together unseparated and then slice after baking into individual sandwiches.

3.Mix together the mustard and mayo. Spread mixture on top side of roll.  Sprinkle with salt and pepper, if desired. Place the top of rolls on the other halves with the beef, and wrap sandwiches in aluminum foil.

4.Bake for 15-20 minutes or until cheese is melted. Serve immediately.

Note: These can be made ahead of time and refrigerated, may require 5 more minutes of baking. Also can be prepared ahead and frozen. Defrost in refrigerator overnight and bake as directed.
These are super yummy with a sweet and a tangy flavor from the preserves and mayo/mustard.  Great way to use up leftovers or pick up deli slices for a super party sandwich.

  3. Ooh, these look so good! My husband would love them. Interesting flavor combo with the peach preserves!

    We also took advantage of the nice weather this past weekend and grilled some pork chops glazed with raspberry chipotle sauce. Yum!
