Have you tried Publix Deli Chicken Salad?
I LOVE it!
At $6.99 a pound, I decided to try my hand at it homemade.

My version is minus the nuts.
Cause we all have enough nuts in our lives! *wink*
This Chicken Salad is easy and Oh So Yummy.
Publix Deli Chicken Salad
1 Lemon Pepper Rotisserie Chicken (deboned and shredded)
1 - 6oz bag of Dried Apricots (cut in pieces)
1 cup of Dried Cranberries (I used Ocean Spray Craisins)

1 cup of Dried Cranberries (I used Ocean Spray Craisins)
1/2 teaspoon of honey
Dash of salt
Dash of salt
Mayonnaise
Mix and serve!
Seriously, it is THAT easy.
Of course, you can make your own chicken or purchase one to make this into a NO 'cooking' meal.
Awesome for Summertime.
Whip up a fast sandwich for lunch or with crackers and a side for a light dinner.
Mine is shown with fresh from the garden cantaloupe.
